Waffle On is one of the most recognisable and successful street food businesses in London.

Two and a half years after giving up a job in music production for advertising, Eddie has stalls in several places each week.

Think hard about coming up with an original idea, work out your bottom line, tweak the idea, start out small scale, establish a web presence if you're committed, say goodbye to your weekends, remember your bottom line, and scale up if it's working. There are future plans for a restaurant, which must be a measure of the health of the business.
